Cucumber Pinwheels with Goat Cheese Spread

Ingredients
4 cucumbers
2 Tbs olive oil
1 (4 oz) log goat cheese, room temperature
3/4 cup whipped cream cheese, room temperature
2 Tbs fresh lemon juice
2 tsp fresh parsley
1 tsp garlic powder
1/2 tsp salt
1/2 tsp black pepper
Directions
- Cut ends off cucumbers; peel one side. From peeled side, cut lengthwise slices (about 1/4 inch thick). For best results, use a mandoline. Sprinkle cucumber with salt.
- In a bowl, add remaining ingredients. Stir to combine. Gently spread a layer of cheese mixture across each cucumber slice. Roll up to create a pinwheel. Secure with toothpick or decorative skewer. Place upright on serving platter. Sprinkle with salt and pepper before serving.
